Gajiga Restaurant only uses low-sugar rice, rice with 80% less sugar than regular rice, to cook rice. And, the soup served with main dishes is a broth made with pork, vegetables, and fruits boiled for 24 hours.
On top of that, Gajiga only uses a very limited amount of salt and sugar. Especially, only about 100g of salt is used per year. Caramelizing onion or paprika is the only way to create sweet and rich flavors, and every food is housemade except pickled radish and kkakdugi.
Therefore, the availability of menu items varies depending on daily circumstances.
